Potato and Spinach Bake

Potato & Spinach Bake 010aPerfect for St Patrick’s Day – this potato bake flecked with spinach is a great option for vegetarians or serve as a side dish to carry the green theme through the meal.

I sometimes find dishes created for St Pat’s Day a bit scary as they are artificially coloured so when I hit on something delicious and natural like this it’s a winner.

Potato and Spinach Bake

Serves 4

I don’t bother peeling the potatoes for this dish and mash fairly roughly to give a dish with lots of texture, but peel the potatoes if you wish.

1kg all-purpose potatoes such as Agria, cut into 2.5cm pieces
2 cloves garlic
1 bunch (400-500g) spinach
2 tbsp olive oil
½ cup vegetable stock
salt and freshly ground black pepper
120g day-old bread or bread rolls

1              Preheat the oven to 200°C.

2              Make breadcrumbs by placing in a food processor with 1 tbsp oil and pulsing to make coarse breadcrumbs. Set aside.

3              Place potatoes and garlic in a saucepan, pour over cold water to cover. Cover pan with lid, place over a medium heat and bring to the boil. Remove lid and add salt to taste.  Continue to cook for 15 minutes longer or until potatoes are tender.

4              Meanwhile, prepare spinach by remove stems and slicing leaves. When potatoes are cooked add spinach to pan, bring back to the boil and cook for 2-3 minutes or until spinach wilts. Remove pan from heat and drain well.

5              Add oil to potato mixture and roughly mash. Add stock, mix to combine and season to taste with salt and pepper.

6              Spoon potato mixture into a baking dish. Scatter with
breadcrumbs and bake for 15 minutes or until breadcrumbs are golden and potato mixture is bubbling.
